Biryani was a highly consumed dish, yet it lacked consistency and standardization. The co-founders, Mohammed K. Bhol and Chef Mikhail Shahani, saw an opportunity to tap the market in a big way and hence created the House of Biryan.
Bhol is a third-generation entrepreneur in the food industry, having studied at the Taj Institute of Hotel Management and gained vast experience in business and operations, including training under Gordon Ramsay in London. Shahani, an alumnus of Le Cordon Bleu, Paris, brings over 20 years of experience cooking in prestigious venues like 212 Bar & Grill and Crowne Plaza.
Testing the Idea Through Shared Kitchens and Pop-Ups
To validate the market concept and understand the consumers better, they began testing shared kitchens and pop-ups. This strategy helped them to refine their ideas without any high capital expenditure.
They officially launched their first cloud kitchen in Mumbai in December 2022, with Shahani focused on menu development, recipe systems and kitchen standardization, while Bhol managed business strategy, partnerships, expansion and finance.

Struggles, Setbacks and a ₹40,000 Loss
Every successful business has its ups and downs. The same was true for the House of Biryan. Despite the challenges, with delivery guys cancelling and only one customer showing up sometimes, they knew they were building something more than just a business.
After launching their cloud kitchen brand in December 2022, they faced their initial struggles with visibility and control over operations.
Another major setback occurred when a store shut down unexpectedly, resulting in a loss of nearly Rs. 40,000, equivalent to almost a full day's sales.

To overcome these challenges, they decided to build their tech stack from the ground up, investing heavily in backend technology to gain clarity and control over every aspect of their operations, including supply chain, staff attendance, store uptime, order management, and customer feedback.
This strategic move to own their technology became a key operational advantage.

Founded in 2022, the company had rapidly expanded to 22 stores across Mumbai, Delhi and Dubai, with a strong focus on delivering consistent, chef-curated and customizable biryani through a tech-enabled cloud kitchen model.
The cloud kitchen has made significant strides, achieving a revenue of Rs 33.90 lakh in 2024, with a forecasted revenue of Rs 66 crore for 2025.

They recently received a strategic investment from former India cricket captain MS Dhoni for his debut in the food-tech vertical. This partnership is aimed at supporting House of Biryan's ambitious global expansion plans, targeting markets such as Australia, Japan, the United Kingdom and North America.
The company projects a network of 120 to 150 kitchens and a revenue outlook of Rs. 450-550 over the next three years.
